Indian Rice Pudding or Kheer

Indian rice pudding




Ingredients:

  • 1 litre milk,
  • 1/2 cup rice,
  • 5 tablespoon sugar powder,
  • 5 green cardamoms powder,
  • 1 pinch saffron,
  • 10-15 almonds,
  • 15-20 cashews,
  • 1 tablespoon golden raisins..




To prepared a indian rice pudding, rinse the rice till the water runs clears of the starch, soak the rice in enough water for 15-20 minutes.
 For blanching almonds, heat water in a pan. when the water comes to a boil then switch off the flame and then add the almonds to it. cover and keep aside for cool it.
Then heat another pan add milk and let it come to a boil. meanwhile drain the rice and keep aside. reduce the flame and add the rice. stir and simmer the milk and let the rice grains cook. the whole process of cooking the rice in the milk takes about 25-30 minutes on a low flame.
 the rice is cook well and the pudding also thick. after the rice is added, add the sugar. stir and continue to stir often so that lumps are not formed. scrape the sides of the pan and add this dried milk into the pan. let the almonds cool and then peel them. slice them along with the cashews. rinse the raisins and keep aside,  the rice is almost done, add the almonds, cashews, cardamoms powder and saffron.
 cook further till the rice grains are completely cooked. the rice pudding also thicken by then. remember to keep on scraping the sides and adding the dried milk from the sides in the simmering pudding.
switch off the flame and add the raisins and stir. Our delicious indian rice pudding are ready to eat, enjoy it...
