Easy And Delicious Cashew Or Anacardium Curry


Cashew (Anacardium) curry






Ingredients



  • 2 cups or more unsalted cashews, 
  • 2 chopped tomatoes, 
  • 3 tablespoons coconut oil, 
  • 1 chopped red onion, 
  • 10-15 fresh curry leaves, 
  • 1 tablespoon yellow mustard seeds, 
  • 1 tablespoon hot or mild curry powder, 
  • 1 teaspoon turmeric, 
  • 1/2 teaspoon chili powder, 
  • 1 cups coconut milk, 
  • 2 tablespoons cashew paste, 
  • salt to taste..






To prepared a cashew curry, In a large bowl add the cashews, 1 teaspoon salt and enough cool water to cover the nuts. 

Let soak for at least overnight. Drain and set aside. In a large pot, heat the coconut oil over medium heat after 5 minutes Add the onion and a pinch of salt and cook, stirring occasionally, until softened, Add the curry leaves and mustard seeds and cook, stirring regularly, until the leaves become softened and the mustard seeds begin to darken. 
Stir in the cashews, tomatoes, curry powder, turmeric and chili powder then add the coconut milk and pinch of salt. 
Low the heat and bring the mixture to a simmer, stirring to make sure everything is well combined. Cover the pan and cook, checking occasionally and adding a bit of water if the mixture is too thick. 
Then add cashew paste and cook for 15-20 minutes. Our cashew curry are ready to serve garnish with coriander leaves and enjoy it...
