Easy And Delicious Red Thai Curry
Red Thai Curry
Ingredients:
- 2 cups rice,
- 1 tablespoon oil,
- 500 grams boneless chicken breasts cut into 1-inch pieces,
- 2 minced shallots,
- 3 cloves minced garlic,
- 3 tablespoons red curry paste,
- 1 tablespoon freshly grated ginger,
- 1 1/2 cup coconut milk,
- 1 bunch broccolini cut into 2 inch pieces,
- 2 green thinly chopped onions,
- 3 tablespoons chopped fresh cilantro leaves,
- 2 tablespoons freshly squeezed lime juice,
- freshly ground black pepper,
- kosher salt..
To prepare a Red thai curry, in a large saucepan of 3 cups water, cook rice and set aside. Then Heat oil in a large stockpot over medium heat. Season chicken with salt and pepper, to taste.
Add chicken, shallots and garlic to the stockpot and cook until golden, about 5 minutes. Stir in red curry paste and ginger until fragrant, about 2 minutes. Stir in coconut milk.
Bring to a boil, reduce heat and cook, uncovered, stirring occasionally, until reduced and thickened, about 15-20 minutes.
Stir in broccolini until just tender, about 4-5 minutes. Remove from heat, stir in green onions, cilantro and lime juice, season with salt and pepper, to taste. Our delicious red Thai curry ready to eat. Serve hot with rice and enjoy the delicious Thai flavor...
